Our hogs are “All Natural” and are “Free Range”.  There are no antibiotics, steroids or hormones in their feed.  They receive an all-vegetarian diet and are provided shelter from the elements.  Except for the bacon and the sausage, there are no preservatives used in the processing.  We do not use saline infusion in our processing.

The hogs are a cross between Hampshire, Yorkshire and Landrace.  We believe we get the best attributes of each breed in our final product.

Chops & Tenderloin

Pork Chops

The “Other” white meat.  Our center cut pork chop includes a curved bone and is structurally similar to the Rib-eye steak.  They are cut .75 to 1 inch thick and packaged 4 chops to a package.  The package will weigh about 2 pounds.

Boneless Pork Chops

 

Same as the Pork Chop but without the bone.  I like them in “Sweet and Sour” pork.  They are cut .75 to 1 inch thick and packaged 4 chops to a package.  The package will weigh about 2 pounds.

Tenderloin

If this were beef it would be the Filet Mignon.  The tenderloin is the most tender pork cut.  The package contains 2 tenderloins and weighs about 2 pounds.

Cuts of Pork Ribs

Spare Ribs are the normal rack of ribs, and are less expensive than other cuts of ribs.

 

Baby Back Ribs, sometimes called loin ribs or back ribs, are shorter and smaller, and leaner and meatier than spareribs.

 

Country Style Ribs are from the blade end of the loin (the upper part of the back bone behind the shoulder), and aren't really ribs, but are chops. They have a higher ratio of tissue to bone, than other types of ribs. That is more of their weight comes from meat and fat. They can be prepared like spareribs and can also be grilled like regular pork chops.

Boston Butt Roast

From the name you would think the roast would come from the rear of the hog, but that is not the case.  It is cut from the shoulder.  During the Revolutionary War Boston had many butchers and was a supplier of meat to the Armies in the area.  The butchers would pack the roast in a brine solution in a large wooden barrel called a “Butt”.  The guy ordering the meat would say, “Send me some of those Boston Butts”.  That is how it got its name.  So much for history. 
The roast is great with vegetables in a crock-pot, a roasting pan or makes mouth-watering barbeque.  It is a bone-in roast that weighs about 4 pounds.

Sausage

This is really good sausage.  NO MSG.  It does contain BHA, BHT and Citric acid as preservatives.  All three are antioxidants.  It also has “Natural” spices.   It comes in tubes that weigh about 2 pounds.

Ground Pork

Like it says, just ground pork.  Linda combines this with our Ground Chuck to make great meatloaf.  It comes in tubes that weigh about 2 pounds.

Ham Slices

Honey cured Ham.  No artificial ingredients.  One slice per package, weighs about 1 pound.

Bacon

Country Style Bacon.  Thick sliced.  (CAUTION:  The bacon contains nitrates and nitrites, no different from the grocery store)  Even though the bacon comes from “All Natural” Free Range hogs, it is the only product that we sell that has artificial ingredients.   The packages are about 2 pounds.
